This vegan salad may seem like it has a lot of ingredients, but trust me when I tell you it’s super easy to make.
Here are the salad ingredients you will need
Strawberries: You will need fresh strawberries for the salad, but you can use fresh or frozen strawberries for the dressing. The riper the better! For extra flavor, look for strawberries that are red and firm to the touch with fresh, bruise-free green stems. About 2-3 slices of medium strawberries per serving is a good portion to stick to. Cut them as you see fit!
Baby spinach: We love baby spinach for this salad. It is rich in vitamins A, C, K and folate, as well as minerals like iron, calcium and potassium. Butter lettuce would work well too, as would mixed greens or arugula for a more peppery bite.
Pecan nuts: Strawberries and pecans make a perfect duo! Pecans are also high in fiber, minerals, and high in heart-healthy monounsaturated fats. Toss them into the salad or lightly toast them to bring out their warm nutty flavor.
Feta (we used vegetable!) – Feta cheese is optional, but the salty richness adds another layer of texture and flavor to this salad. We found a plant-based Vegan Feta at Trader Joe’s and are now obsessed! It tastes exactly like the dairy-based feta we know and love. It’s perfect if you’re looking to cut down on dairy or avoid it.
Sliced red onion: A little crunchy and sweet with a slightly tangy bite, red onion balances well with strawberries.
Red wine vinegar: A nice complement to strawberries, like red wine, red wine vinegar also has beneficial antioxidants.
Darling: Raw honey contains beneficial nutrients, such as amino acids and B vitamins including B6, thiamin, niacin, riboflavin and pantothenic acid, which are lost in the processing of commercial honey when heated . I used Flora’s Manuka Honey which is non-GMO, sustainable and unpasteurized.
Shallot: We like to add a touch of shallot to offset the sweetness of the strawberries in the vinaigrette. Related to garlic and onion, but much more delicate, the shallot will infuse into the vinaigrette as it sits and add a hint of onion flavor. The shallot is totally optional if you prefer the pure strawberry flavor.

How to make Strawberry Vinaigrette
Making this spring-inspired dressing is so easy! You don’t even have to cut much. Just put everything in your food processor or blender and blend until smooth.
If you prefer a little more texture to your dressing, you can pulse it and stop when you reach the consistency you like.
Store the strawberry vinaigrette in the refrigerator until ready to serve.

Strawberry Pecan Salad with Strawberry Vinaigrette
Bursting with tangy ripe strawberries, this simple yet tasty superfood salad is packed with nutrients like vitamin C and antioxidants. Using Udo’s 3 6 9 Herbal Blend of Oils in Strawberry Dressing provides an increase in omega-3 fatty acids.
- Salad ingredients
- baby spinach or green vegetables of your choice
- fresh strawberries sliced (2-3 per person)
- pecan nuts
- sliced red onion
- feta cheese we used herbal products
- Strawberry Vinaigrette Ingredients
- 1 Chopped off strawberries
- 2 soup spoons Red wine vinegar
- 1 teaspoon shallot chopped (OPTIONAL)
- 1 teaspoon Dear
- 1/8 Chopped off Udo’s Oil Blend 3-6-9
- ¼ teaspoon black pepper
- ¼ teaspoon salt
Preparation of the vinaigrette: place all the ingredients for the vinaigrette in the blender or a mini food processor and process until smooth. Set aside or keep refrigerated until ready to serve.
Dressing the salad: Divide the green vegetables between the bowls. Garnish with sliced fresh strawberries, pecans and feta. Serve with strawberry vinaigrette on the side.
Apple cider or champagne vinegar can be used instead of red wine.
To intensify the flavor of the nuts, lightly toast the pecans. Simply spread the nuts evenly in a single layer on a baking sheet and bake for 5-8 minutes at 350 degrees. Watch them carefully so they don’t burn. Allow to cool before adding to your salad.
