How to use MCT oil

Ingredients you will need to make this fat bomb recipe:

  • Stevia Sweet Chocolate Chips OR keto-friendly chocolate OR choice low sugar chocolate. There is a lot of keto chocolate on the market right now, but it can be a bit pricey. You can also use your favorite dark chocolate or another variety of chocolate that is low in sugar. Baker’s unsweetened chocolate is another option. Simply add in liquid stevia or other keto approved sugar substitute to sweeten the taste after you melt it.
  • Great Lakes MCT Oil – This high quality, healthy oil will provide satisfying fats that will help keep us full while fueling our brain and body. In this recipe, we’ll add it to the melted chocolate and mix it with the dried coconut to make our fat bomb centers. You can get it here.
  • Unsweetened dried coconut – We will basically make our own coconut butter with MCT oil. Most grocery stores sell this type of coconut in the baking aisle. Just make sure you don’t take the sweet type. There shouldn’t be anything other than coconut on the ingredient label.
  • Stevia Liquid Sweetener OR erythritol – How much you use is up to you. Simply sweeten the coconut to your liking. If you don’t have a liquid stevia sweetener, simply swap it out for your favorite keto sugar substitute to taste. If you are using erythritol, you may want to put it in the blender for a few seconds to make it a finer powder that won’t give you a grainy texture.
  • Peppermint extract or aromatic oil – This will give us that cool and refreshing minty flavor to our fat bombs. Culinary grade peppermint essential oil can also be used.

Mint Chocolate Fat Bombs Recipe

These easy, layered chocolate and mint fat bombs with MCT oil will ensure you feel full and satisfy your sweet tooth, while providing a dose of healthy fats.

  1. Place your chocolate molds on a baking sheet or line 24 unit mini muffin cups, 12 standard size muffin cups with paper or silicone muffin cups. Put aside.

  2. Place the coconut in a high speed blender and blend for 1 minute until completely pureed. Add 1 tablespoon of MCT oil and process for another minute or until the coconut mixture is pureed to a smooth texture similar to peanut butter. If your coconut is still dry, keep adding MCT until it is smooth, but not runny. It should stick to your spoon. Add the peppermint extract and sweetener to taste. Put aside

  3. Place the chocolate in a microwave-safe bowl and cook for 30 seconds. Stir and repeat 2-3 more times until chocolate is melted. Make sure you don’t burn. When the chocolate is melted, add the MCT oil and mix.

  4. Pour a little chocolate into the bottom of the chocolate mold or lined muffin pan. This should be enough to cover the bottom. Place in the freezer for 5 to 10 minutes to harden.

  5. Next, pour a teaspoon or two (depending on your mold size) of the coconut mixture over the hardened chocolate bottoms. Place in the freezer for 5 to 10 minutes to harden.

  6. Finish the fat bombs by garnishing them with the rest of the melted chocolate. Then garnish with optional toppings like crushed toasted almonds or coconut shavings. Place in the freezer to harden one more. Eat 1 or 2 fat bombs whenever you feel like something sweet between meals. Enjoy!
