How To Make These Low Carb Keto Raspberry Lemon Waffles

Ingredients you will need:

    • Almond powder – We used super fine bleach.
    • Great Lakes MCT Powder– This high quality healthy powder will provide satisfying fats that will help us feel full while fueling our brain and body. If your dough is a bit thin, try adding another spoon to thicken.
    • Almond milk – you can also under coconut or your other favorite milk.
    • Lemon juice and zest – The lemons and their zest give these waffles an incredibly fresh taste. We add a little more sweetener than we would in simple waffle recipes to balance out that addition of acid.
    • Melted butter – You can use coconut oil or ghee if you prefer.
    • Stevia Liquid Sweetener OR erythritol – When testing this recipe, we used an erythritol sweetener. If you don’t have it on hand, simply swap it out for your favorite keto sugar substitute to taste. Erythritol is 20% less sweet than sugar, so if you are using a sugar substitute that measures sugar one by one, use only 2-3 tbsp.
    • Baking powder and salt
    • Xanthan gum – This one is optional but the help can give the waffles a little more structure.
    • Vanilla and almond extract – Almond is optional but adds a nice flavor note. Don’t skip the vanilla.
    • Raspberries – After a few tries, we found that our waffle iron was burning the raspberries before the waffles were cooked. So serving them on top is just as delicious. Bring the whipped cream!

Special Tools You Will Need For These Keto Waffles:

Blender – To make the preparation of this recipe easier, just put all the ingredients in the blender. A hand blender will also be suitable. Just make sure to mix it for a good 2 minutes to get a nice soft and smooth dough.

Waffle iron or waffle iron – I can’t make waffles without one of these. Depending on your waffle iron, the serving size for this recipe may change. We estimate that this recipe will make about 6 standard size waffles.

For the waffle batter

    Chopped off
    almond powder
  • 3
    eggs
  • 1/2

    almond or coconut milk

    tablespoon
    butter or coconut oil, melted
  • 4
    tablespoon
    erythritol (or other keto-approved sweetener, to taste)
  • 4
    soup spoons
    fresh lemon juice or as needed
  • 2
    zested lemons
    optional
  • 3
    spoons
    MCT Powder Great Lakes Gelatin Co.
  • 11/2
    teaspoon
    yeast
  • 1/2
    teaspoon
    xanthan gum (optional)
  • 1/4
    teaspoon
    salt

Instructions

  1. Place all ingredients in a blender and mix for 2 minutes until a cake-like dough forms. The dough should be pourable but not too thin or runny. If it is too fine, add a little more almond flour and mix again. If it is too thick, add another drizzle of milk.

  2. Spray the inside of your waffle iron or machine with non-stick spray or brush with a little coconut oil or butter. Pour the batter into the center of the waffle iron. Close the lid and cook, 3 to 5 minutes or until the waffles are lightly golden.

  3. Serve with your choice of butter, low-carb whipped cream, sugar-free syrup and garnish with fresh raspberries on top.
