A lot of Greek yogurts on grocery store shelves are not real Greek yogurt.

Just read the label. If thickening agents like guar gum, milk protein concentrate, corn, or tapioca starch are listed as ingredients on the label, they are not real Greek yogurt. Go away. The companies that use these “fillers” are trying to save time and money by passing something that isn’t the real deal, but honestly most of us wouldn’t know the difference. Sneaky, sneaky.

Authentic Greek yogurt is made using a special process.

Have you ever noticed how beautifully thick Greek yogurt is? For centuries, yogurt made in Greece has been filtered to remove its whey. This lactose-containing milk protein and the same watery liquid that forms on yogurt must be filtered properly to remove them. When the whey is properly removed in the traditional way, you get super rich, creamy Greek yogurt, with less sugar and more protein.

We mixed 0% fat, plain, Delta Greek yogurt with prepared lemon curd, lemon juice and folded it with whipped cream. This tangy lemon filling is then poured into a graham cracker crust and chilled for a few hours. Things you will need:

Graham Cracker Crust – To make things easier, use a prepared crust or just follow the recipe to make your own. You will need graham crackers, brown sugar and melted butter.

Prepared lemon curd – You can always make your own, but you really don’t have to. Take one off the shelf.

Lemons – For extra flavor and a concentrated lemon flavor, we added fresh lemon juice and lemon zest. Quarters can be used to decorate the pie before serving.

Gelatin powder – It helps the pie to set. Replace an envelope if that’s what you have on hand.

Heavy cream – It’s a cream pie so whipped cream is a must. It’s simple to do, but there are a few alternatives. You can substitute for the prepared whipped topping. For healthier versions, look for non-dairy alternatives.

Lemon Greek Yogurt Cream Pie

This creamy tart made with rich and creamy Delta Greek yogurt is a little tart, a little sweet and very refreshing. We used 0% fat Greek yogurt to keep things lighter, but 5% will do just fine. To speed things up, use a prepared graham cracker crust and a prepared whipped topping instead of the homemade whipped cream.

Ingredients

Graham Cracker Crust

  • 1 1/2
    cups
    graham cracker crumbs
  • seven
    tablespoon
    melted butter
  • 2
    tablespoon
    brown sugar
  • 1/8
    teaspoon
    salt

Pie filling

  • 1
    Chopped off
    cold heavy cream
  • 2
    tablespoon
    Granulated sugar
  • 1 1/2
    cups
    Delta Greek Yogurt
  • 3/4

    prepared lemon curd

    lemon juice
  • 2

  • 2

Pie filling

  • 1
    Chopped off
    heavy cream
  • 2
    tablespoon
    Granulated sugar

    teaspoon
    vanilla
  • lemon wedges

Instructions

Making the Graham Cracker

  1. Preheat the oven to 325 degrees. Place graham cracker crust ingredients in a food processor and mix until crackers are crushed into fine crumbs. Add remaining ingredients, then press into greased 9-inch pie pan. You can use the bottom of a glass to get an evenly pressed bottom. Bake for 12 minutes or until lightly browned. Cool completely before filling

Make the pie filling

  1. In a large bowl, combine the Greek yogurt, lemon curd and lemon zest. Put aside.

  2. Sprinkle gelatin over 3 tablespoons of cool water in a microwave-safe bowl and let “bloom” for 5 minutes.

  3. In the bowl of a stand mixer with the whisk, whip 1 cup heavy cream on high power until stiff peaks form on high power. Reserve in the refrigerator.

  4. Then heat the gelatin and water in the microwave for 20 seconds. Add the lemon juice and whisk until completely dissolved. Let cool for 2 minutes then stir into yogurt mixture.

  5. Lightly stir in whipped cream until blended. Pour the filling into the prepared pie crust. Smooth evenly with a spatula and let cool for at least 3 hours or overnight. Putting it in the freezer can speed up the setting time.

Suggested portion of pie

  1. Beat 1/2 cup heavy cream on high power with 2 tablespoons powdered sugar and 1 Tbsp. vanilla. Spread on a pie or transfer to a pastry bag to garnish and add lemon slices if desired. Enjoy!
