What kind of pears should you use

When buying pears, choose those that are just ripe and still firm to the touch. We recommend D’Anjou, Bosc or Bartlett pears, but the ones you have on hand will do. These pears are best prepared and cooked just before serving. Just be aware that if you use green or yellow pears, the skin of the pears will darken and turn brown during cooking. Peeling pears before cooking is always an option.

How to prepare pears

To start the preparation, start by slicing the pears in half lengthwise. Then use a spoon or melon spoon to scoop out the middle of the pear to remove the seeds. This will create some good for the nut and oat crumble. Place pear halves on a baking sheet, sliced ​​side up. If they are not flat, cut off the rounded part of the pear a little to create a flat platform for the pear to sit on. Brush each of the pear tops with a little melted butter (or coconut oil for a dairy-free version) and sprinkle with cinnamon.

Make the pear filling

The oat nut crumble in this recipe adds a nice crunchy texture that is mildly sweet. Simply combine the oatmeal, brown sugar, melted butter and a pinch of salt. Stir and fill the pears with about 2 tablespoons of the oat and nut crumble. Bake in a 400 ℉ (200 ℃) oven. Bake for about 30 minutes or until the pears are tender with a fork and the crumble is golden brown.

Making the crumble for this recipe is absolutely delicious, but completely optional. If omitted, it is not necessary to remove the pears. Simply remove any visible seeds from the pears, brush with butter or coconut oil, sprinkle with cinnamon and continue the recipe as directed.

How to make elderberry whipped cream

This recipe works with both dairy and non-dairy whipped cream. Simply place the well cooled heavy cream with a little honey or powdered sugar in a chilled bowl of your electric mixer and beat until thick, rich and creamy. You can also use electric beaters or elbow grease with a whisk instead. Just make sure the cream, bowl, and beaters are cool.

Non-dairy tip: If you’re looking for dairy-free whipped cream, make your own by replacing the heavy cream in this recipe with whole-grain canned coconut milk that has been chilled in the refrigerator overnight.

For an elderberry infusion with our whipped cream, we add 2-3 spoons of Flora Health Sambu®Guard elderberry crystals to each cup of whipped cream and mix well. The color of your elderberry whipped cream will become more intense as it rests. Chill in the refrigerator until ready to use.

How to serve pears

To serve your dessert, place one or two halves of baked pears on a dish then sprinkle the pears with a little honey. We like Flora Mānuka Honey, which is sustainably sourced in New Zealand, 100% traceable and known for its potent antimicrobial action.

If your Mānuka honey is too thick to water, just dilute one or two tablespoons in a small dish with a little lukewarm water until it has the right consistency. If you do not have Manuka honey use whatever honey you have on hand.

  • Ingredients for whipped cream with elderberries
  • 1
    Chopped off
    heavy cream or whole coconut milk
  • 1
    honey or powdered sugar
    or more to taste
  • 1
  • 2-3
    Scoops Flora Sambu®Guard elderberry crystals



  2. 1 – Preheat the oven to 400 ° F.

  3. 2- In a small bowl, combine the oats, nuts, salt and brown sugar. Put aside.

  4. 3 – Cut the pears in half and using a small spoon (a teaspoon works), dig a well in the center of each pair. Place on a baking sheet. Line with parchment paper for easy cleanup.

  5. 4 – Brush the inside of the pears with a little melted butter (or coconut oil) then sprinkle with cinnamon.

  6. 5 – Add the rest of the melted butter to the oat-nut mixture and mix. Divide among the pear halves.

  7. 6 – Bake until the pears are tender, about 25 to 30 minutes.

  8. 7- While the pears are cooking, prepare the elderberry whipped cream. Using a mixer or electric mixer, place all the ingredients for the whipped cream in a cooled bowl and beat until thick and creamy (about 2-3 minutes). Add elderberry crystals 1 teaspoon at a time until desired flavor and color is achieved. Refrigerate until ready to serve.

  9. 8 – To serve: Place a half of a baked pear on a plate. Drizzle with Mānuka honey and garnish with a dollop of elderberry whipped cream and serve hot.

  10. Note: If you are using Mānuka honey, it may be too thick to water. It is enough to dilute it with a few teaspoons of lukewarm water until the desired thickness is reached.
